Healthy Eats Monday: Mango Quinoa Salad

I'm cheating a little this week and didn't take pictures of this salad because there are already beautiful pictures of this recipe on the web. I was introduced to this salad by a friend of mine (Olivia) and it has become all the rave with our weight loss group! It is yummy!



The star of this show is the superfood Quinoa, the seed of a green leafy plant that is still cultivated in South America.



Most grains contain an incomplete source of protein (you need to pair them with another food to make the complete protein). Unlike most grains however, quinoa provides the full spectrum of nine essential amino acids.



1/2 cup of quinoa will give you around 127 calories, 2 grams of fat, 23.4 grams of carbohydrates (2 of those being fiber), and 4.5 grams of protein.


Quinoa is also... excellent for a vegetarian diet, high in fiber, gluten-free and easy to digest, easy to prepare, and has a low glycemic index (rates food based on how much they make your blood sugar rise) compared to other whole grains.


And, if you’ve ever tasted quinoa, you know it’s delicious. And one more thing...you can find it in most grocery stores along side the rice. I even found it at Walmart!

So glad you posted a quinoa recipe! I have been on a quinoa kick lately, and I eat it nearly everyday. I'm excited to try a new way of eating it!
