These Power Pancakes are packed with a punch! Believe me, they will hold you over til lunch!
Made with egg whites, cottage cheese, and oatmeal, they've got everything in them to give you the energy and protein you need. And they are wheat-free for all you gluten-sensitive people. My kid's even love them, and they are easier than regular pancakes to make.
Add 1 eggs and 6 egg whites to your blender. I have one of these handy dandy egg white separators.
Then 1 cup low-fat cottage cheese
Sometimes I add 1/2 tsp. cinnamon. Vanilla or almond extract is good too! (or nutmeg, or whatever you fancy)
Add 1 cup (non-instant) oatmeal. Blend until smooth.
Then flip just like a pancake.
Instead of syrup, we add yogurt on top. Preferably vanilla yogurt. Makes 6 Power Pancakes at 112 calorie each

I think I might try this tomorrow for breakfast. It looks good and falls in line with my high protein diet.

We tried these this morning for breakfast, and they were a hit. They remind me a little of crepes, which of course is a good thing. I topped mine with vanilla-rhubarb yogurt, and I think I'm in love.
