1 cup of this cancer-fighting antioxidant-filled food contains your daily requirement for vitamins K and A. It also contains almost all of your daily requirement for magnesium and folate. Not to mention spinach is loaded with fiber, calcium, iron, vitamin C, and protein!
Antioxidants fight free radicals in the body, thus preventing cancer. Spinach improves cardiovascular health by preventing harmful cholesterol to clog your arteries. It also improves brain function and protects against aging!
Preheat oven to 325 degrees. Begin by chopping 6 oz. fresh spinach (1/2 a bag).
In a medium bowl combine spinach with 1/2 cup chopped sun-dried tomatoes (dried, not in oil), 1/2 cup feta cheese, 2 tsp. garlic, and 1/4 cup light mayonnaise.
Have I mentioned that anything with sun-dried tomatoes and feta cheese HAS to be incredible!
Using your (clean) hands, fill 16 tenderloins with spinach mixture, holding them in place with toothpicks. Fill in the dish with the remaining spinach mixture.
Squeeze 1 lemon over the chicken, and sprinkle each chicken tender with Panko (Japanese bread crumbs) and dried oregano.
Bake uncovered @ 325 for 30 minutes, or until top is golden and chicken is cooked.
Two tenders count as one serving, at only 207 calories. Plus delicious and nutritious!
