We love asparagus around here. One of these days I will do a post on different ways to cook asparagus. So stay tuned for that!
Asparagus is loaded with nutrients: a very good source of fiber, folate, vitamins A, C, E and K,. This yummy green vegetable is packed with antioxidants, ranking among the top fruits and vegetables for its ability to neutralize cell-damaging free radicals, which may help slow the aging process. I'm all about that! Who wouldn't be?
Today's Healthy Eats Monday includes asparagus, it is a popular dish at our home. And very easy.
Cook 8 oz. fettuccine according to package. Try whole wheat fettuccine! I didn't this time, but it tastes great either way.
Meanwhile in a large skillet, brown 1 package (14 oz.) reduced fat smoked turkey sausage, thinly slices and halved.
Add 2 cups fresh chopped asparagus, 1 cup sliced mushrooms, 1/2 cup chopped onion, 2 minced garlic cloves and 1/2 tsp. thyme.
Saute vegetables until tender.
In a separate bowl, combine 1 tbsp. cornstarch and 1 cup fat free chicken broth until smooth and then add broth to the sausage and vegetable mixture. Bring to boil, cook and stir 1-2 minutes or until thickened.
Drain pasta, and add to sausage and vegetable mixture. Toss to coast and sprinkle with Parmesan Cheese.
