Mango-Coconut Creamy Sherbet

I fell in love with mangos while living in Mexico City, I ate them like candy because they were abundant! Deliciouso!

First of all, this creamy fruit is an excellent source of vitamin c (an antioxidant) which helps build your body’s defense system and strengthens your immunity. This factor alone helps prevent free radicals from attacking your body. I've talked about free radicals before, but just as a reminder, free radicals are harmful agents that form one of two ways—either naturally through the metabolic phase or through pollutants found in the air. Either way, free radicals break down the body and make you vulnerable to contracting illnesses such as the common cold, cardiovascular disease and even some cancers.

Who would guess that eating icecream could thwart off illness?

This printable recipe is a must-try, if I do say so myself! It only has 64 calories per 2/3-cup serving!

Cube 2 cups (about 3 large mangos) of ripe mango.


In a blender combine cubed mangos, juice of 1 lime, 3-4 tablespoons of TRUVIA, and 15 ounces of coconut milk (So-Delicious Brand, found in the milk section at a grocery store like Safeway). You could also use canned light coconut milk.







Blend until mixture is SMOOTH, scraping sides if necessary.



Pour mixture into the freezer can of an ice-cream maker (I have the icecream Kitchenaid attachment). Mix until mixture to soft-serve consistency, about 20 minutes or so. Spoon sherbet into a freezer-safe container; cover and freeze 2 hours or until firm.




Here is my pretty-in-pink sister-in-law, Sondra, giving this a taste test. I took the icecream with us to the mountains, by the time dessert time rolled around it was the perfect, creamy consistency. She doesn't love mango normally, but she LOVED this!

Thanks!! So Delicious Coconut milk beverage is our family milk of choice these days!! I'm not a fan of that sweetener, but will try the recipe with a different one instead (probably maple syrup).
