I love granola, but when store bought it is usually high in calories and expensive. This recipe is loaded with fiber (11 grams) and good fats, so will keep you full all morning long. Mix with yogurt or eat with milk. Makes 18 cups!
10 cups regular rolled oats
OR
10 cups 6 grain oats
(I used grains this time, I like them best)

"Six Grain Oats" 25 lbs/$31.20
To the oats, add:
2 cups sliced raw almonds
1/2 cup raw sunflower seeds
1/2 cup raw pumpkin seeds
1/4 cup raw sesame seeds
1/4 cup raw sesame seeds
2/3 cup olive oil or canola oil
3/4 cup real maple syrup
1/2 tsp. salt
1 1/2 tsp. cinnamon
5 tsp. vanilla
Mix all ingredients in a large bowl. Spread thinly on 2 large cookies sheets, which have been sprayed lightly with non-stick spray.
Now here's the tricky part. I have made this recipe several many times and found it turns out best if you bake at 325 degrees for a total of 30 minutes, stirring every 10 minutes.
Stay close to the oven until granola is lightly browned.
Stir one more time and then let cool.
